Dish: Hand-shredded Mutton

Hand-shredded mutton is the ultimate test of meat quality. Knife down, freshly slaughtered and boiled—the simplest cooking method brings the most direct truth: good is good, bad is bad. It should have been a feast for sharing, the most sincere hospitality of the steppe people. But now, three small knives are inserted neatly and coldly into it.
