Dongpo Pork is so good! Fatty but not greasy, tender but not falling apart, perfectly square and well-textured. It’s a "kung fu" dish that follows strict rules. Just like The Emperor, the square shape represents order and rationality; the aroma comes from precise heat and discipline. Anyway, I’m gonna need a big bowl of rice for this.
